William Fevre

2019 was another warm vintage for Chablis; drier even than 2018, due to low winter rainfall. The warm dry weather in the growing season resulted in healthy fruit with little or no disease. Just prior to harvest, a storm provided welcome rainfall, which helped swell the ripe, mature fruit. Yields were greatly reduced due to the low weight of individual bunches (as little as half the norm). Moderate alcohol levels of 12 to 13.5% were achieved and the wines fully fermented to dryness. In fact, with less than 1g / ltr of sugar the wines are exceptionally dry. There was good fresh acidity, too. Overall, the wines are ripe, fresh and highly concentrated, with a very good capacity to age.
