Michel Chapoutier spent years searching for the right spot in the Rousillon and finally settled on a site that shares many similarities with Hermitage: steep terraced vineyards, complex geology, and precious old vines.
Domaine Bila-Haut is farmed both organically and bio-dynamically. The vineyard is located on Gneiss and schistous soils from the Devonian Period and limestone from Kimmeridgian Period. Grapes are hand-harvested and destemmed. Extraction is only carried out by punching of the cap during a long maceration (at least four weeks). About a half matured in vats and the other half is aged in casks according to the vintage.
The results are astonishing and though hard to resist drinking now, it's worth holding some back. The latest release is from the highly successful 2017 vintage and will be arriving in April 2019.
Not yet bottled, the 2017 Côtes du Roussillon Villages Latour de France Occultum Lapidem checks in as a blend of 50% Syrah, 40% Grenache and the balance Carignan and Mourvèdre brought up in tank. Its saturated purple color is followed by a fresh, vibrant bouquet of blackberries, black raspberries, dried earth, lavender, and pepper. It's certainly in the same league as the 2016 and has beautiful purity and elegance married to classic Roussillon richness and depth.
